A big welcome to the new Executive Chef Ryan Houston at The Fairway Hotel


The Fairway Hotel Spa & Golf Resort has a new member wearing the Chefs’ whites and teasing the taste buds of guests and staff alike. It is with great pride that we announce the appointment of seasoned culinary innovator Chef Ryan Houston to the position of Executive Chef. Houston joins The Fairway Hotel with over two decades of experience at some of South Africa’s finest restaurants and hotels.

In his role as Executive Chef Houston will coordinate, lead and work alongside his talented team members, Jan du Toit, Nathalie Marthinus and Kevin Mkandla.  In the past few months the team has had some fun working together on some great ideas. “I must take my hat off to my predecessor, Chef JP Siegenthaler, as he left me with an amazing team, all the correct procedures and protocols in place and a kitchen that is clean, neat and well organised”, said Houston.

“I am charmed by the atmosphere at The Fairway Hotel, the company’s values as well as the work conditions. I am excited working with a General Manager that has a vision for the future,” concluded Houston.  “The Fairway Hotel presents a unique opportunity for me to grow in a new direction and some of my objectives for the future is to launch a new menu that will reflect not only my skills and idea but to encourage my team to add their unique touches to the dishes. I look forward to contributing my years of experience at the forefront of the culinary world using modern and classical cooking techniques to further enhance good team cohesion, to prepare seasonal food that is innovative, clean, beautiful, delicious and still have fun doing it.

Chef Ryan has 5 beliefs he carries with him:

  • When you do something, do it properly the first time (this is something his late mother taught him)
  • The 5P’s being Proper Planning Prevents Poor Performance (joking he says that if something goes wrong in the working day, it could however mess up the plan!)
  • Eat, Live, Breath 5 star – Luke Sacco’s motto to live by
  • JUST DO IT – if a last-minute large group comes in with a meal request and you are able to assist, just do it
  • Never walk alone – There is no ‘I’ in TEAM so whatever you do, do it as a team
