Head ChefMust have a Matric and a tertiary chef’s qualification
Must have at least 3-5 years’ experience in the same position in a 3 or 4 star Hotel Conference and wedding establishment
Must be creative and be able to create exceptional food
Must be exceptionally good in menu planning and food preparation of banquets as well as conferences
Must be familiar with all aspects regarding management of the kitchen
Must be extremely competent in all administrative aspects in the kitchen
Must be account for and be strong in cost and stock control and must be able to compile the relevant reports and deal with the relevant suppliers
Must have good leadership skills and be able to deal with all levels of staff
Must be competent in all aspects of disciplinary procedures
Must be computer literate and be able to use Pluspoint
Must have good communication skills
Must be at the forefront of ensuring the standard of the Culinary product
In quality and presentation of food and that it is innovative and sets new trends in the industry
Must be visible to guests over meals and food samplings and be able to communicate professionally, meeting or exceeding guest expectations
Must be able to effectively manage hygiene and cleaning plan for the Kitchen and Staff canteen, offering corrective action and measures to the external Food Safe Hygiene audit report whilst maintaining and rectifying any failing standards from OHS reports

Night Auditor
Must have a Hospitality qualification as well as at least 2 years’ experience in night auditing
Responsible for managing the Night Shift efficiently in accordance with company policies and procedures and the legal requirements of the Republic of South Africa
Produces reports on pertinent aspects of the Department as directed by company policy, the Rooms Divisions Manager and the General Manager
Maximizes both the Average Room Occupancy and Average Room Rate achieved by the manipulation of the business mix and tariffs charged
Must be familiar with Apex reservations system or something similar
